COCONUT CRUSTED CHICKEN

Preheat the oven to 180 deg C.  Mix 1 cup of dessicated coconut *, 2 T lime juice, 1 T garam masala, 1 T tumeric and 2T coconut oil *.  Season to taste.
Marinate chicken fillets, thighs or breast on the bone in the mixture for 30 minutes, then roast for 15 - 20 minutes.

A super quick and healthy dinner.  Add a green salad or a home-made coleslaw mixed with a light viniagrette dressing.
